Tiramisu

Tiramisu is probably the most famous Italian dessert of all time, and surely the most popular. It’s a very refreshing dessert, and is good at revitalising you after a meal. Probably due to the coffee.

Chilling time: 3-4 hours

Ingredients

•    375ml (1 ½ cups) strong black filter coffee
•    60g (4 tablespoons) caster sugar
•    1 ½ x 250g packs mascarpone cheese
•    125ml (1/2 cup) double cream
•    5 tablespoons brandy or whatever else you prefer (Baileys is a light alternative)
•    36 sponge finger boudoir biscuits
•    1 tablespoon cocoa powder

Instructions
1.    Make the coffee and cool completely.
2.    Put the mascarpone cheese, sugar and cream into a bowl, and beat until thick and creamy. Then add the brandy (or your alternative) and beat again until it looks like thick whipped cream.
3.    Dip each biscuit into the coffee and immediately place it into a dish, a casserole dish works best as it’s large, and make a single layer of the biscuits pushing them closely together.
4.    Then evenly spread half of the mascarpone mixture over the dipped biscuits, and then add a second layer of the dipped biscuits. The final layeris the remaining mascarpone mixture and take it right to the sides of the dish, levelling the top. Use a round bladed knife to mark a scrolled pattern over the surface for the authentic Tiramisu look.
5.    Finally, cover the casserole dish with cling film and let it chill in the refrigerator for at least 3 – 4 hours. Before serving sieve the cocoa powder generously over the top. And enjoy.

I love wearing my Jack Daniels free tshirt. Even in the UK, everyone recognizes the square black label with white writing. You would be surprised at the reactions I get wearing this shirt to a pub. The founder, Jasper Newton “Jack” Daniel was born in 1846, the year seems to be a certainty. Unfortunately, you could only get Jack Daniels free tshirt per order because the promotion was on a  first come first serve basis.
